RECEPT: Healthy granola

healthy granola
Lately I am much more into healthy food and I'm also reading alot of books about healthy food as well, my favorite is Powerfood by Rens Kroes, she has the best recipes! The boy and I tried to make our own healthy granola in order to bring some variety in our standard breakfast menu. This granola recipe is delicious with all sorts of yoghurt (or soja products) and is superhealthy AND easy.

Why making your own granola
It's not only way cheaper than buying healthy muesli or cruesli in the supermarkets, it also makes your home smell absolutely delicious! You know what kind of ingredients you have used which gives you a better feeling (at least, it gives ME a better feeling, knowing what's inside). Besides that, it's so simple, you hardly can't do anything wrong!

RECEPT: Pizza


Na heel lang geen recepten te hebben gepost is het dan toch eindelijk tijd voor een heerlijk nieuw gerecht: een homemade pizza! Want ja, we gaan ook het deeg helemaal zelf maken. Helemaal niet moeilijk, je kan het zo gezond maken als je zelf wilt en echt overheerlijk! We kochten trouwens ook een pizzasteen, deze steen kan je in de oven leggen en zorgt ervoor dat je zelf thuis een steenoven pizza kan maken (heerlijk knapperig)

After a long time without posting any recipes it's finally time for a new and delicious dish: a homemade pizza! And truly homemade because we're also going to make the dough ourselves. It's not difficult at all, you can make it as healthy as you want and it truly is delicious! We also bought a pizza stone, a stone which you can put in your own oven at home and which turnes it into a delicious crispy stone-oven pizza.

One of my favorite and most easy-peasy pasta dishes! This tagliatelle is great for a dinner, easy to prepare and delicious to eat!

RECEPT: Sandwich with carpaccio


While I try not to eat too much meat, I can't skip a good sandwich with carpaccio! I think I eat meat app. 1 to 2 times a week, I just don't really like it and I believe we DO need meat but not a lot of it. That's the way I look at things, I'm not an expert though. Anyway, when having a good carpaccio sandwich at schiphol airport, I decided to try it out myself at home and share the recipe with you guys and girls. Here we go!

RECEPT:Overnight oats


Nowadays, overnight oats are hot and happening in the world of fitness and clean eating. And as some of you already know, I'm also have my very own 'Fashion Moodboard challenge', which includes healthy and clean eating. While my usual breakfast is always the same, I decided to try something different after a tip from a lovely colleague (thanks Marthe!). Overnight oats are healthy and they are great as a breakfast to start of a green day!

I'm going to Thailand in two months, so when I was thinking about a healthy recipe for tonights diner, I came up with a lovely green curry. With special thanks to our dutch supermarket Albert Heijn. This green curry is healthy, very easy and also really quick. Alright... Let's start!

RECEPT: Carpaccio salade


It's time for another healthy recipe which you can eat as lunch, diner or as a small extra course. I stole this recipe from a french restaurant in Nice, where I ate it as a lunch and it came with some delicious french fries. Definitely more than enough and very healthy (except for the fries ofcourse).

Ingredients
- Thin sliced carpaccio
- Black olives
- Cherry tomatoes
- Rucola
- Yellow and red peppers
- Green pesto
- Parmigiano cheese
- Olive oil

What do you need to do?
Just start with the carpaccio and spread it out on a nice plate. You add a little bit of green pesto to the carpaccio. On top of that you put the rucola and all the other ingredients. And last but not least: add some olive oil (extra vergin). Easy does it, huh? Enjoy!

RECEPT: Pasta di mare


Time for another healthy recipe, this time with tuna! Thanks to one of my best friends C. :) It's healthy, delicious and easy to prepare! Let me know if you've tried it out and what you think of it!

Ingredients
* Whole weat penne pasta
* Tuna
* Black olives
* Mushrooms
* 1 Onion
* Chopped garlic
* Pasta sauce for fish (I used Grande Italia di mare)
* Haricots verts
* Italian cheese (I used paramigano)


RECEPT: Vegetarian pasta pesto


Time for another healthy recipe! And this time one of my favorites. This recipe is originally by Amber Alberda, who wrote books about healthy food and this was one of her recipes in het cookbook. It's an easy, very healthy and ofcourse delicious recipe. You don't miss the meat if you're not a vegetarian, and clearly: I'm not a vegetarian.

Let's start with the ingredients:

* Whole weat penne rigate pasta
* Olive oil of good quality
* Garlic (about 4 pieces)
* Feta cheese
* Freshly washed spinach
* 20 pieces of sun dried tomatoes in an oil base
* Pine kernels
* Cherry tomatoes
* Black olives
* Thyme

RECEPT: Italian Hamburger


A while ago I ordered a delicious italian hamburger in a little cafe in the center of Haarlem. It was so wonderful, that I decided to write down the recipe and to try it out at home. It's extremely easy to make and will do as a big lunch or as a petit dinner. Whatever you prefer. We had it as a dinner. Optional is the salad, which was made out of leftovers. You can even add some -french- fries if you like. Let me know if you tried it out and what you think of it!




It's really nice if you grill the hamburger. You can also use some minced meat and make the hamburgers yourself. We bought some plain hamburgers and grilled them. I baked the onions till they were soft and grilled the pepper really short not to loose the taste of it. Just slice the mozarella in nice thin pieces and do the same with the tomatoes. When the hamburgers are well done, put them onto the italian bread roll. Put the tomatoes and the mozarella on it and put the grilled veggies on top! Add some cocktail sauce for an extra taste.


Use some leftovers for your salad. We used mixed salad, white cheese, tomatoe, red pepper, olives and red onion (also leftovers from the veggies from the recipe above) and made the dressing out of olive oil and lemon juice. Add a little bit of italian herbs and seasalt and you've got a delicious salad!

RECEPT: Penne Arrabiata



What do you need?
- Penne Rigate pasta
- 4 oz of pancetta cut into small dice (or bacon)
- Italian peeled and chopped tomatoes (I used 2 cans)
- 4 cloves of garlic, chopped
- 2 tablespoon of fresh parsley, chopped
- 1 tablespoon of olive oil
- Freshly grated Parmiggiano Reggiano
- Pinch of hot pepper flakes
- Salt and pepper to taste

I never ever liked cooking, being in the kitchen or anything that has something to do with food (except eating, ofcourse). But with the experience of living on my own, and not wanting to eat take-away food all the time, I was forced into the kitchen. What was my worst enemy, became a friend. I can honestly say that I enjoy cooking nowadays. I still don't do it very often (keep in mind I spend about 4 nights per week in a hotel...), but when I find a good recipe, I love to try it out. And this one turned out to be so good that I wanted to share it with you! I hope you like it!

Let's get started!

Fill a large pot with water, add some salt and bring to a boil. When it's boiling, add the penne rigate pasta. Mine took about 10 to 11 minutes to become 'all dente'. Cook yours according to the package.


In the mean time, you can put the panchetta in a large skillet and let it cook over medium heat till it gets nice crispy and a bit brown. After a couple of minutes, add the chopped garlic and let it cook for another minute.


Add the canned tomatoes and stir thoroughly! Reduce the heat to low and let it cook for another 10 - 15 minutes.


Pasta should be done now! Make sure to drain it and add a teaspoon of olive oil to the pasta.


Add the parsley to the sauce and stir. If you like, you can already add the parmiggano cheese and stir it again. But it would be nice to also put the cheese on the table for your guests so they can add as much as they like.


Put everything together! Enjoy your lovely penne arrabiata! Bon appetit!

RECEPT: Salmon Salad


This very healthy salad is perfect for a warm summer day. It's also really easy to make! Let me know your recipes with salmon! I love Salmon!


What do you need?
- Salmon (fresh)
- Spinach
- Pine Kernels
- Lemon
- Olive Oil
- Sea Salt


You start with washing the spinach. Squeeze the water out of it and put the spinach in a big bowl. Cut the salmon into small pieces and put that also in the bowl. Next step is to bake the pine kernels a little bit so they turn a bit brown. Just put the pine kernels in a pan without any oil or so and watch them carefully. They just need a couple of minutes to turn brown but will burn easily! So stay close :) When they're cooled off, you can add them to the bowl as well.

And now the dressing: Squeeze out a complete lemon and use an equal amount of olive oil. Mix it all together and at a bit of salt. If you prefer, you can also add a little bit of balsamico dressing. I don't like the taste of it, so I don't use it.

RECEPT: Bruchetta


Just a lovely little nibble or perfect as a starter on a bright and sunny day: bruchetta. I swear by this recipe, so I wanted to share it with you.


What do you need (4 bruchetta's)
- 4 Tomatoes
- Mozarella Cheese
- Garlic
- Olive Oil (extra vergine)
- Basil
- Bread

First of all you toast the bread. In the mean time, you slice the tomatoes and mozarella in nice, thin pieces.

When the bread is ready and nicely toasted, cut the garlic in two pieces and rub the open and on the bread (when the bread is still warm, it's really easy to do, the garlic will 'melt')

Drop a view bits of olive oil over the breads and put the tomato and mozarella slices on it. Finish it with some fresh basil and some seasalt and pepper.

All done, hope you like it!

RECEPT: Crazy sandwich!



And yet again it's sandwich time! This time a crazy one! Take a look at the ingredients. It might sounds strange, but it defenitely is delicious and very healthy! Let me know if you like it!

Ingredients
♥ Brown bread roll (or white, whatever you prefer)
♥ Tomatoes
♥ Cucumber
♥ Parsley
♥ Banana
♥ Slices of old cheese
♥ Sambal (sweet!)
♥ Red unions

What to do?
Slice the bread rolls in two parts. Spread the sambal on the bread rolls. Use as much as you want. I usually don't put that much on it, I don't like my food to be spicy. On top of the sambal you put the cucumber, tomatoes, unions and bananas. Put and old slice of cheese on it and top it off with some parsley.

Put your sandwich in the oven for about 10 minutes. (I use a snack toaster, so it depends. I usually wait till I see that the cheese is melting and I will take it out).

RECEPT: Delicious sandwich


Every now and then I will share one of my favorite and healthy meals with you. If you have any suggestions or idea's, don't bother to share them with me! I'm always in for healthy, delicious meals. For today I'll learn you how you can make this mozarella-tomato sandwich.

What do you need?
♥ A sandwich. I prefer a brown bread roll. An italian one is really good too!
♥ Mozarella
♥ Tomatoes
♥ Red pesto
♥ Unions
♥ (yellow) paprika/pepper
♥ Vegetable mix (I prefer an italian vegetable mix, in that case I don't use the peppers and unions, because they are already in the mix)

I prefer to start putting the pesto on the bread roll. On top of that I'll put the mozarella, than the tomatoes and then the other vegetables! Easy does it, huh?

RECEPT: Delicious pasta


So for today something completely new on my blog! I want to show you how to make my favorite dish of all times. It's really simple, it tastes very good and it's really healthy!

Follow my steps and let me know if you like it :)

You'll need:
* 1 yellow paprika
* 1 marrow
* 1 big union
* Garlic (I use alot, about 5 to 6 big pieces)
* Tagliatella (or any other pasta you prefer)
* 1 medium brocolli
* Black olives
* Tuna
* Olive oil

First of all you can boil some water for the pasta. Use the biggest pot you have! You can also cook the brocolli in the mean time. Chop the union, paprika and marrow in small bits. Also grind the garlic. Heat a non-stick frying pan and add some olive oil. Add the chopped onion and garlic briefly over medium heat until just translucent.

After 3-4 minutes, add the finely chopped paprika and marrow too. Wait then for about 3-4 minutes again for it to shrink and soften a bit.

Your water will probably be cooking right now, so you can add the pasta. Don't forget to stir your pasta after adding it! You don't want it to stick on the bottom of your pot! You can add some salt to the pasta if you like.

Start chopping the black olives into small pieces.

Add the peeled tomatoes,

and add the brocolli and black olives too. Make sure your brocolli is al dente when you add it to the mixture.

The last part is adding the tuna and stir thoroughly.

Don't forget to taste everything! That's what chefs are supposed to do!

Put the mixture back on the fire but make sure you turn the heat down!

Add some salt if you like.

After about 10 minutes (check the package for the suggested cooking time!) take a piece of pasta out and taste it. I prefer it to be al-dente. When it tastes good, empty the complete pot of pasta into a stainer and don't forget to shake out the excess water before your put it back into the pot.
