I'm going to Thailand in two months, so when I was thinking about a healthy recipe for tonights diner, I came up with a lovely green curry. With special thanks to our dutch supermarket Albert Heijn. This green curry is healthy, very easy and also really quick. Alright... Let's start!
* 250gr chicken breast (cut into small pieces)
* Thai vegetables
* 200gr unpolished (brown) rice
* 2 spoons of olive oil
* 100gr of green curry
* 200ml of cocos milk
* 2 spoons of coriander
Step one
First of all cook the rice as described on the package. Stir fry the small pieces of chicken in some olive oil for about 3 to 4 minutes.
Step two
Add the vegetables and stir fry them together with the chicken for another 5 to 6 minutes.
Step three and four
Add the cocos milk and the green curry to your vegetable/chicken and stir thoroughly. Let it cook for another minute or so.
Slice the coriander into small pieces and when everything is ready (your rice as well), start serving! First, put the rice on the plate, secondly you add the curry and you top it off with a little bit of coriander.
